The three farms that make up Tres Estrellas are high in the mountains about 2 hours hard driving from Jaen. The farms all operate as part of the Volcafe Way programme that provides farmers with practical and progressive agricultural support. The remoteness of the area means that cherry is processed on the farms into dried parchment then delivered to the mill for final processing and bagging. Normally these coffees would go into a generic blend, isolating them has shown the amazing quality and flavours that Peru can produce.
